Heat the oil in a saucepan. Add onion and garlic & cook for 3-4 minutes or until the onion is soft.

Add the chili, spices,vegetable cubes and stir for a further minute.

Add 4 cups water and mix knorr thick tomato soup & bring to boil over high heat.

Simmer for 7 minutes. Add basil and Set aside to cool slightly.

Puree the soup in a blender, until smooth.

Season with sea salt and freshly ground black pepper.

Serve hot with crisp bread croutons
