LEMON CORIANDER SORBET

  • 100 g fresh coriander leaves & stalk
  • 30 g cabbage
  • 30 g carrot
  • 30 g spring onion
  • 20 g celery
  • 10 g ginger
  • 10 g garlic
  • 5 g green chillies
  • 10 ml oil
  • 3-4 nos bay leaves
  • 3-4 nos whole cloves
  • 5-6 nos black peppercorn
  • salt to taste
  • 600 ml aromat seasoning
  • 5 g Knorr lime seasoning
  • 5 g roasted gram flour
  • 10 g butter

  • 1 Chop all vegetables.
  • 2 Heat oil and add bay leaves, cloves, black pepper and whole red chili.
  • 3 Stir cook for 15-20 seconds on low flame.
  • 4 Add coriander stalk, crushed ginger, garlic and green chili and stir at medium flame for a minute.
  • 5 Add veggies and stir cook at medium heat till the veggies soften.
  • 6 Add Aromat seasoning in the mixture, bring to boil and reduce heat.
  • 7 Simmer for 10-12 minutes.
  • 8 Strain the liquid and keep aside to cool.
  • 9 Heat butter in the pan on low heat and add gram flour and stir cook till it the mixture emits aroma.
  • 10 Add strained liquid slowly, whisking continuously so that no lumps are formed.
  • 11 Add Knorr Lime Seasoning, adjust salt and remove from heat.
  • 12 Serve hot with coriander leaves as garnish.
