- 350g Chicken drumstick
- 1 Onion, chopped
- 1 Tomato, chopped
- 4-5 Garlic pods, chopped
- ½ tsp Black pepper powder
- 1 tbsp Vegetable oil
- 1 tbsp Unsalted butter
- 2 tbsp Processed cheese grated
- 1 packet Knorr Mexican Tomato Corn soup
- Salt To taste
- 1 tbsp Fresh Basil chopped
- 1 carrot, batons
- 1 capsicum, cubes
Marinate the chicken with salt and pepper powder and grill until the chicken is cooked and tender.
Add some unsalted butter in a pan over medium heat. Add chopped garlic and sauté till the garlic is translucent. Add chopped onion into this and sauté further.
Add carrot batons and capsicum cubes -sauté well.
In another pan, empty the entire content of Knorr Mexican Tomato Corn Soup,add 4 cups ( 600 ml) of water .
Place the pan on heat and bring it to boil while stirring continuously to avoid lumps .
Simmer for 3 minutes .
Add the vegetables and grilled chicken to the soup,cook for another minute till the sauce has coated the chicken and vegetables nicely .
Garnish with freshly chopped basil.
Serve hot and enjoy!
